I don't think salt and pepper are condiments. Other than that, I flip this list on its head to make it closer to my tastes.
as a (former) food professional i will second the notion that salt and pepper aren't condiments (even if they are what makes food worth eating).
as a an additional note, you list is worthless since you left off the greatest condiment ever and easily the best side effect of globalization: SRIRACHA.
indian pickle deserves a place on your list in a big way also.
I'm not sure what (if anything) I'd bump but:
